Bullhead, such as the brown bullhead pictured above, are common throughout Minnesota. These members of the catfish family are incredibly hardy, tolerating conditions that would kill more desirable fish, and can even survive in polluted and oxygen depleted waters. All three species of Minnesota bullhead (black, brown, and yellow) are not only edible, but actually quite good if correctly cleaned and cooked. Though we like to believe that only Iowans fish for bullheads, many Minnesotans like them too!
